Salad with Bacon and Poppy Seed Dressing

Cooking Time: 3 minutes
This is a lighter version of a salad my mom always made during holidays and special occasions.
4 slices bacon, reduced sodium
10 cups red leaf lettuce, or other leafy lettuce
1/3 cup vegetable oil
1/4 cup vinegar, cider, or other
1 shallot(s), finely chopped
2 tablespoons sugar
1/4 teaspoon salt
1 teaspoon mustard, dry
1 tablespoon poppy seeds
3/4 cup cottage cheese, low fat
Wash lettuce and spin dry. Roughly chop lettuce and place in a large salad bowl. Place bacon in between double layered paper towels and cook in the microwave for 2 to 3 minutes until crisp and cooked through. To make dressing, mix remaining ingredients in a small bowl. Pour dressing over lettuce, add crumbled bacon and toss gently.
