White Chocolate and Coffee Ice Cream Sandwiches

This is a grown up version of our very popular chocolate chip ice cream cookie sandwiches. Some like to roll them in mini chocolate chips or crushed macadamia nuts. Others prefer to use frozen yogurt to lighten it up. Use any of your favorite Ice Cream flavors.
1 package cookie dough, about 16 ounces, white chocolate chip and macadamia nut
12 squares aluminum foil
6 cups ice cream, light, coffee flavor, 12 scoops
Preheat oven to 325 degrees. Divide cookie dough into 24 cookies. Bake cookies according to package directions. Remove ice cream from the freezer to slightly soften. Let cool for at least 10 minutes. Place one scoop of the ice cream on the back of a cookie and top with another cookie. Squeeze slightly together. Wrap with a piece of aluminum foil and place in the freezer. Continue process with the rest of the cookies. Let the cookie sandwiches freeze for several hours. For best results serve when frozen very solid. Otherwise the ice cream will squeeze out when taking a bite of the sandwich.
