Tilapia with Black Bean and Corn Salsa

This is a fresh and delicious way to serve fresh fish.

Ingredients

1 1/2 pounds tilapia, red snapper or other mild fish

1 cup corn, fresh, or frozen

1 can black beans, reduced sodium, 15 ounce

3 tomato(es), Roma, chopped

1/2 onion(s), red, chopped

1/2 cup cilantro, fresh, chopped

1 lime(s), juice

2 teaspoons garlic, bottled minced

1 teaspoon cumin, ground

1/2 teaspoon chili powder

1/2 teaspoon garlic powder

1/2 teaspoon salt

1 tablespoon olive oil

Preparation

Season fish with cumin, chili powder, garlic powder, salt and pepper. Heat a large non stick skillet over medium high heat. Add oil and then add the fish. Cook for about 3 minutes per side until browned and cooked through. Remove the fish to a serving platter. Place the skillet on the heat. Add corn and cook for 1 to 2 minutes over medium high heat until lightly browned. Drain and rinse the beans and add them to the corn. Add onions, tomatoes, lime juice, and salt. Stir and then spoon the corn relish over the fish and serve. Top with fresh cilantro.
