Zucchini Crusted Mediterranean Pizza

This is a great and easy way to add a boost of zucchini nutrition to a pizza crust.

Ingredients

3 cups zucchini(s), shredded

3 egg(s), large

1/3 cup flour, whole wheat or all purpose

1 teaspoon oregano, dried leaves

1 1/2 teaspoons rosemary, dried

1/8 teaspoon salt

3/4 cup kalamata olives, pitted, sliced

4 green onion(s) , chopped

1/2 pepper(s), bell, red, yellow, or green, chopped

2 cups cheese, mozzarella, low moisture and part skim milk, shredded

2 tomato(es), medium, thinly sliced

Preparation

Preheat oven to 450 degrees. Shred zucchini with a box grater and place in a large bowl, press zucchini with a paper towel to remove excess liquid. Mix in eggs, flour, 1/2 the oregano, 1/2 the rosemary and salt. Spray a 13 X 9 inch baking dish with cooking spray and spread zucchini batter over the bottom evenly. Bake for 8 -10 minutes and remove from oven. Reduce heat to 350 degrees. Sprinkle the crust with the olives, green onions, bell pepper and mozzarella. Top with tomato slices and sprinkle with fresh pepper. Bake for 25 to 30 minutes. Cut in squares. Enjoy.
