Grilled Peanut Chicken Tenders

Prep Time: 5 minutes plus overnite marinade

Cooking Time: 8 minutes

Comments

Reduce the spiciness with less cayenne pepper. However, it did not phase our teen taste testers -they gobbled it up. If your chicken tenders are small try threading them on skewers before grilling.

Ingredients

1/4 cup peanut butter, natural creamy or crunchy, or any

3 tablespoons soy sauce, low sodium

4 teaspoons lime(s), juice

1 tablespoon brown sugar, light

1 teaspoon cumin, ground

1/4 teaspoon pepper, black, ground

1/2 teaspoon cayenne pepper

1/4 teaspoon garlic powder

1 onion(s), medium, chopped

1 pound chicken breast, boneless and skinless, tenders

Preparation

In a large zip lock bag combine all of the ingredients except the onion and chicken. Seal the bag and mix well by gently squeezing and sloshing the bag. Reserve about 1/4 cup of the marinade for sauce. Add the chicken and onion to the bag and seal and coat the chicken. Refrigerate over nite or for a few hours if possible. Cook the chicken on the BBQ or grill pan for 3 to 4 minutes per side or until done. Place chicken on a platter and drizzle with the reserved sauce.
