Spinach Salad with Tomato and Mozzarella

This is a simple and nutritious salad. Use cherry, grape, or chopped Roma tomatoes. If fresh water packed mozzarella is available it tastes best with this salad. To lower the calories and fat a little, use a bottled low fat balsamic vinaigrette instead, and lower the amount of cheese.

Ingredients

5 cups spinach, fresh baby

2 tomato(es), Roma, chopped

4 ounces bocconcini (small mozzarella balls)

1/4 cup olive oil, extra virgin

3 tablespoons vinegar, balsamic

1/4 cup basil, fresh, chopped

1/4 teaspoon salt

1/4 teaspoon pepper, black, ground

1 teaspoon garlic, bottled minced

1/4 cup nuts, pine nuts

Preparation

Toast the pine nuts in a small skillet over medium heat for 3 to 4 minutes. Place vinegar, olive oil, basil, salt, pepper and garlic in a small bowl and mix well. Place the spinach in a large salad bowl, pour dressing over and toss. Arrange the spinach on a serving platter and top with chopped tomatoes, mozzarella and toasted pine nuts.
