This is a simple and fun way to make delicious sandwiches on the grill. You can make them on the outdoor grill, or use an indoor grill pan. Weigh them down by placing a skillet on top, or a baking sheet on top of the sandwiches with a brick on top of the baking sheet.
Ingredients
8 slices bread, Ciabatta or Italian bread
8 ounces turkey breast, cooked, boneless, roasted, sliced
4 ounces cheese, mozzarella, low moisture and part skim milk, sliced
3 tablespoons pesto sauce (prepared)
2 tomato(es), medium, sliced
2 cups spinach, fresh baby
1 tablespoon mayonnaise, light or reduced fat
cooking spray
Preparation
Combine pesto sauce and mayonnaise, mix well. Spread 1 tablespoon of pesto mixture on each of 4 slices of bread. Top each slice with 2 ounces of turkey, 1 ounce cheese, 2 slices of tomato and 1/2 cup of spinach. Top with remaining bread slice. Coat the grill with cooking spray. Coat with cooking spray and heat over medium heat. Place sandwiches on grill. Place a piece of foil over sandwiches; top with a heavy skillet. Cook 3 minutes on each side or until golden brown.
