Bananas Foster With Frozen Yogurt

Ingredients

1/4 cup butter, light

1/4 cup brown sugar, light

2 tablespoons rum, dark, such as Meyers

1 teaspoon vanilla extract

1/4 teaspoon cinnamon, ground

1 orange(s), juice only

2 banana(s)

2 cups frozen yogurt, vanilla, low fat

Preparation

Melt butter in a large skillet over low heat. Add brown sugar, vanilla, cinnamon, and juice from one orange. Bring to a low boil and then reduce heat to a low simmer. Stir and cook for about 2 minutes. Peel and slice bananas in half lengthwise, add bananas to sauce and stir gently. Pour rum on top and turn burner off. Carefully light a match or lighter and touch to the rum and allow the alcohol to burn off. Scoop frozen yogurt into four bowls. Spoon bananas and sauce over each one and serve.
