Ice Cream Chocolate Chip Cookie Sandwiches

Little kids and big kids will love you for these. Homemade or store bought cookies may also be used. These are best served after freezing for several hours, so make them ahead of time.

Ingredients

1 package cookie dough, 16.5 ounce package

12 squares aluminum foil, (6 inch each)

6 cups frozen yogurt, vanilla, low fat, 12 scoops

Preparation

Preheat oven to 350 degrees. Bake cookies according to package directions. Let cool for at least 10 minutes. Remove frozen yogurt from the freezer to slightly soften. Place one scoop of the frozen yogurt on the back of a cookie and top with another cookie. Squeeze slightly together. Wrap with a piece of aluminum foil and place in the freezer. Continue process with the rest of the cookies. Let the cookie sandwiches freeze for several hours. For best results serve when frozen very solid. Otherwise the frozen yogurt will squeeze out when taking a bite of the sandwich.
