To speed up prep, try using precooked bacon. We found one without nitrates.
1 cup bread, whole wheat sourdough or other whole wheat, cubed
2 teaspoons olive oil, extra virgin
4 tomato(es), medium, divided
1/3 cup mayonnaise, light or reduced fat
2 teaspoons vinegar, white
1/4 teaspoon garlic powder
1 green onion(s) , chopped
1/4 teaspoon pepper, black, ground
6 cups lettuce, romaine, chopped
4 slices bacon, reduced sodium, or turkey bacon
Preheat oven to 350 degrees. Cube or tear bread into crouton sized pieces and toss with olive oil. Bake for about 15 minutes, turning once. Prepare bacon by laying a paper towel on a plate, then the bacon and then another piece of paper towel. Microwave bacon for approximately 1 minute per slice. To make the dressing, peel and finely chop one of the tomatoes into a large salad bowl along with juice. Mix in the mayonnaise, vinegar, chopped green onions, garlic powder and pepper. Chop the remaining tomatoes and lettuce and add to the bowl. Crumble and add the bacon and croutons. Toss and serve.
