Sun Dried Tomato Bread

This is a simple and delicious side to serve with soup or salad.
4 slices bread, sourdough, medium slice
4 tablespoons sundried tomatoes, packed in oil, drained and finely chopped
1 1/2 cups cheese, mozzarella, low moisture and part skim milk
Preheat oven to broil. Place bread slices on a baking sheet. Spread each slice with sun-dried tomatoes. Top with mozzarella cheese. Place tray under broiler for 3 - 5 minutes or until lightly browned. Serve.
