These soybeans are a good source of protein and iron, and an excellent source of fiber. They make a great appetizer or lunch box item for kids and adults as well.

Ingredients

1 pound edamame, still in the pod, fresh or frozen

1/2 teaspoon salt

Preparation

Place 6 cups of water in a medium sauce pan. Bring to a boil over high heat. Add the salt and the edamame and cook for about 2 to 3 minutes. Drain the water and place in a serving bowl. Best served warm or room temperature.
