Date Nut Muffins

To bump up the nutrition, add a teaspoon of ground flax seed. To make it more kid friendly, chop or grind the walnuts and dates finely.

Ingredients

12 muffin papers

3/4 cup water, boiling

8 ounces dates, chopped

1 3/4 cups flour, all purpose

1/4 teaspoon baking soda

1/2 cup sugar

1 egg(s), large

3/4 cup nuts, walnuts, chopped

1 cup cheese, cheddar, shredded

Preparation

Preheat oven to 350 degrees. Bring three quarters of a cup of water to a boil either in a small pan or in the microwave. Pour the boiling water and chopped dates into a mixing bowl and let it sit for a couple of minutes until dates soften. Add the rest of the ingredients and mix well. Spoon into prepared muffin tins (either use cooking spray or paper muffin cups). Cook muffins for about 22 minutes. Test for readiness by poking a toothpick in the center of a muffin. If it comes out clean it is ready, if not cook for a few more minutes and check again until done.
