Halibut in Parchment

Cooking Time: 20 minutes
This is a fun way to make fish. If you do not have parchment paper you can use aluminum foil to make the packets.
4 pieces parchment paper
2 can(s) Cannellini or white beans, low sodium, rinsed and drained
3 tomato(es), medium, chopped
3 tablespoon pesto sauce (prepared)
1 1/2 pounds halibut
4 teaspoons lemon(s), juice only
4 lemon(s), slices
1/4 teaspoon pepper, black, ground
6 basil, fresh, sliced
Preheat oven to 450 degrees or grill on medium high heat. Mix beans, tomatoes and pesto. Divide bean mixture to the center of each sheet of parchment paper. Place one halibut steak on each sheet on top of the beans. Drizzle 1 tablespoon of lemon juice over each halibut steak. Add pepper. Seal parchment packet by pulling up the sides and double folding. Pull up the ends and do the same. Bake in the oven for approx. 18-20 minutes on a baking sheet or grill for approx. 20 minutes in a closed grill (do not flip the packet). Remove from cooking packet and garnish with basil.
