Spinach and Bacon Tart

This is to make and is great for breakfast, brunch, lunch or dinner.

Ingredients

1 roll pizza dough, refrigerated roll such as Pillsbury, (13.8 ounces)

1 cup cheese, Swiss, shredded

4 cups spinach, fresh baby

1/2 onion(s), medium, chopped

4 slices bacon, reduced sodium

3 egg(s), large

1/3 cup milk, 1% fat

1/4 cup parmesan cheese, grated

1/4 teaspoon pepper, black, ground

cooking spray, olive oil type

2 teaspoons olive oil

Preparation

Preheat the oven to 375 degrees. Cook the bacon in a skillet until browned. Remove the bacon from the skillet and place on paper towels to drain the oil. Chop the onion and place it in the skillet over medium heat. Cook the onion for 2 to 3 minutes until soft. Chop the spinach. Remove the pizza crust from the tube and place it on a lightly floured surface to rest for 5 minutes. Spray a 9 inch spring form pan ( or round 9 inch baking dish) with cooking spray. In a large bowl, mix the eggs and the milk. Add the parmesan, half of the Swiss cheese, black pepper, spinach, and crumbled bacon and mix well. Place the dough in the baking pan, and press to cover the bottom and about 1 and a half inches up the sides of the pan to form the shell. Pour the spinach mixture into the pan and spread it around to even it out. Sprinkle with remaining Swiss cheese. Place the pan on top of a baking sheet and bake for about 25 minutes until the tart is cooked through and firm in the center. Remove from the oven and cool for 10 minutes before cutting.
