Slow Cooker BBQ Chicken Sandwich

These are so easy and the kids love them.
1 1/2 pounds chicken breast, boneless and skinless
1 cup barbeque sauce
1/2 cup onion(s), medium, chopped
4 hamburger buns
1/2 cup(s) cheese, mozzarella, low moisture and part skim milk, shredded
Chop the onion and place in the bottom of the slow cooker. Place the chicken breasts in a single layer on top of the onions. Top with the barbeque sauce. Place the lid on the slow cooker and cook on high for 3 to 4 hours, depending on the size of the chicken breasts. When done, place the chicken in a bowl and shred it with a fork. Pour the sauce over the chicken and mix well. Place the buns on a baking sheet and lightly toast them under the broiler for 1 to 2 minutes. Spoon the chicken onto each bun, sprinkle with shredded cheese and serve. Garnish with lettuce and sliced tomatoes if desired.
