Summer Steak and Pasta Salad

This is a great main dish salad. Is it a great way to use leftover steak as well. The recipe calls for raw corn, but it is also great if you grill it, then cut the kernels and add to the salad.

Ingredients

1 cup pasta, penne, whole wheat, dry, uncooked

2 ears corn, fresh

1 pound steak, lean sirloin or any favorite

1 cup tomato(es), grape or cherry

1/4 cup basil, fresh

1/2 cup cheese, feta, crumbled

2 tablespoon parmesan cheese, grated

2 tablespoons vinegar, cider

1 tablespoon vinegar, balsamic

1/2 teaspoon Dijon mustard

3 tablespoons olive oil, extra virgin

1 teaspoon garlic, bottled minced

1/2 teaspoon salt

1/4 teaspoon pepper, black, ground

Preparation

Cook dried pasta according to package directions. Drain pasta. Rinse in cold water and drain again. Season steak with salt and pepper. Grill steak approx 8-10 minutes. Remove steak and slice thinly. Remove husks and silk from corn cobs. Slice corn kernels off of cobs. Combine steak, corn, pasta, tomatoes, basil and feta cheese in large bowl. Mix vinegars, olive oil, garlic and mustard in small bowl. Add dressing to pasta mixture. Add parmesan cheese to pasta mixture and toss.
