Slow Cooker Braised Short Ribs

Ribs usually means high fat, but hard to resist! These are excellent cooked in the slow cooker. Browning them first gives that extra layer of flavor, so don't skip that step. Also, you can add a cup of cabernet wine to the slow cooker for an even richer flavor. Remember them as a special treat!
2 1/2 pounds beef short ribs, lean,with bone, fat trimmed
1 onion(s), medium, chopped
2 carrot(s), chopped
2 stalks celery, chopped
1 cup beef broth or vegetable broth, low sodium
2 teaspoons garlic, bottled minced
1 tablespoon Worcestershire sauce, low sodium
6 ounces mushrooms, Crimini or button or combo, optional
1/2 cup flour, all purpose
Lightly dredge short ribs in flour, coating all sides. Place a skillet over medium high heat and add oil. Brown short ribs in skillet for 1 minute on each side. Place chopped onion, carrots, celery and sliced mushrooms into the slow cooker. Place short ribs in slow cooker. Mix broth, worcestershire sauce and garlic in a small bowl. Pour over ribs. Place cover on slow cooker and cook for 8 hours on low setting. Serve over mashed potatoes or polenta (as shown).
