Carne Asada and Grilled Onion Quesadillas

This is a quick and easy dinner that the whole family will enjoy! You can use any favorite lean steak.
8 tortillas, corn
3/4 pound beef, top sirloin, lean, cut into thin strips
1 onion(s), large, halved and sliced
1 cup cheese, jack, reduced fat, shredded
1 teaspoon cumin, ground
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon pepper, black, ground
Preheat oven to 400 degrees. Cut steak into thin bite sized strips. Season steak with cumin, garlic powder, salt and pepper. Spray a large skillet with cooking spray and heat over medium high heat. When skillet is hot, add sliced steak in a single layer and cook for 1 minute per side until nicely browned. Remove steak from skillet and place in a bowl. Place onions in skillet and cook over medium heat for about 5 minutes, stirring occasionally. Lightly spray 2 baking sheets with cooking spray and place 4 tortillas on top of each baking sheet. Arrange shredded cheese, steak, and onions on top of tortillas, then place remaining tortillas on top. Bake for 5 to 10 minutes until cheese is bubbly. Remove from oven and garnish with avocado and cilantro.
