Orzo Shrimp Salad

This salad is DELISH! You can substitute kalamata olives for black olives for enhanced flavor. Serve warm or chilled.

Ingredients

2 cups orzo, uncooked

1 pound shrimp, raw (medium or large)

1 tablespoon olive oil

3 green onion(s) , chopped

1 cup olives, black, pitted, halved

3 cups tomato(es), grape or cherry, halved

2 cucumber(s), peeled and chopped

3/4 cup salad dressing, vinaigrette or Italian

1 tablespoon olive oil

1 head lettuce, red leaf or other leafy

4 ounces cheese, feta, crumbled

1 tablespoon basil, fresh

Preparation

Cook Orzo per package instructions. Drain orzo and place in a large bowl. Add salad dressing and stir. Place oil in a large skillet over medium heat. Add shrimp and cook for 1 to 2 minutes each side. Remove from skillet and cool. Add shrimp, chopped green onions, olives, tomatoes, and cucumber to pasta. Toss well to coat. Arrange lettuce leaves on the bottom of 6 plates. Place orzo salad on top of each plate. Top with Feta cheese and chopped basil and serve.
