This is a fun and easy way to have the taste of tacos without the shells. You can simply add any toppings that your family enjoys. Increase the nutritional value by adding black beans to the mixture. Lower the fat and calories by using baked tortilla chips instead of Fritos.
1 pound ground beef, extra lean
3 cups Fritos corn chips, (or other type)
1 cup cheese, reduced fat cheddar or jack, shredded
2 cups lettuce, romaine, shredded
2 tomato(es), medium, chopped
1 cup salsa, green or red, fresh
1/4 cup cilantro, fresh, chopped
1/4 cup onion(s), red, chopped
1 whole avocado(s), Haas or any, cubed
1/2 teaspoon cumin, ground
1/4 teaspoon chili powder
1/2 teaspoon garlic powder
In a skillet, brown the beef on medium high heat. Drain any excess fat. Add the salsa and spices to meat and simmer for about 2 minutes. Place the Fritos on the bottom of a plate, spoon the beef mixture over the chips. Top with onion, lettuce, tomato, cheese and avocado, garnish with cilantro.
