Filet of Sole with Homemade Tartar Sauce

This is a fast and simple dish to make for a quick mid week dinner, but nice enough for company. It's a mild fish, so your kids will like it too. If you can't find japanese style panko crumbs, you can substitute with plain or italian bread crumbs.

Ingredients

2 tablespoons olive oil

1 egg(s), large

1 cup panko crumbs, japanese style, about 2 ounces

1 1/4 pounds fish, filet of sole

1/3 cup mayonnaise, light or reduced fat

1 teaspoon Dijon mustard

1 tablespoon relish, sweet pickle

1 teaspoon lemon(s), juice only

1 green onion(s) , chopped

Preparation

Heat oil in a large skillet over medium to medium high heat. Pat fish dry with paper towels. Dip fish in egg, then panko crumbs and place in skillet. Cook fish for about 2 to 3 minutes per side (depending on thickness) until golden brown and cooked through. To make the tartar sauce: Mix remaining ingredients in a small bowl and chill before serving. Serve with Lemon wedges and tartar sauce on the side.
