Warm Tortellini Salad


Serves: 6 as a main dish salad

This makes a great lunch, picnic dish, or light summer dinner.

Ingredients

2 packages tortellini, cheese, refrigerated package

1 1/2 cups tomato(es), grape or cherry

4 cups lettuce, arugula

1/2 cup onion(s), red, thinly sliced

1/3 cup basil, fresh, chopped

1 jar artichoke hearts,marinated, quartered

3 tablespoons vinegar, red wine or cider

1 tablespoon vinegar, balsamic

1 tablespoon olive oil, extra virgin

1/4 teaspoon pepper, black, ground

1/4 cup parmesan cheese, shredded

Preparation

Bring a large pot of water to boil on high heat. Cook pasta according to package directions approx. 8 minutes. While pasta cooks, combine tomatoes, arugula, onion, basil, artichoke, vinegars, oil and pepper in a large bowl. Toss ingredients to coat well. Remove pasta from heat and drain. Add pasta to bowl and toss to coat. Transfer to serving dish and sprinkle with Parmesan cheese. Serve immediately.
