Mandarin Orange Delight

Another of our favorites, this is a quick and light dessert you can enjoy year round since the mandarin oranges are canned.
2 cups mandarin oranges, canned
4 slices cake, angel food, 9 inch diameter
1 cup whipped cream, light
2 tablespoons orange juice
1 tablespoon honey
1 sprig mint leaves, torn
1/2 teaspoon cinnamon, ground
Drain Mandarin oranges. In a medium bowl, mix juice, honey and cinnamon. Add oranges to mixture. Place one slice of cake on each of 4 plates. Spoon one quarter cup of the orange mixture onto cake. Top mixture with one quarter cup of whipped cream. Garnish with mint leaves if desired.
