Asian Beef Lettuce Cups

These are quick and easy to make, and a popular dish in asian restaurants.

Ingredients

1 pound ground beef, extra lean

2 teaspoon garlic, bottled minced

1/2 cup cucumber(s), chopped

1/2 cup carrot(s), shredded

1/3 cup pepper(s), bell, red, yellow, or green, chopped

1/3 cup onion(s), medium, chopped

2 tablespoon mint leaves, chopped

1 lime(s), juice only

1/3 cup Hoisin sauce

2 green onion(s) , chopped

1 head lettuce, butter or large green leafy

Preparation

Place a large skillet over medium high heat. Add beef and cook approx 3 minutes, stirring to crumble. Stir in garlic and cook additional 2 minutes. Arrange whole lettuce leaves on platter. Chop and add carrots, cucumber, red bell pepper, and onion to skillet. Simmer on low heat for 2 minutes. Stir in fresh mint to skillet. Combine 1 tablespoon of lime juice and the Hoisin sauce in a small bowl. Add sauce mixture to beef. Stir gently to coat. Remove from heat and spoon mixture into lettuce leaves. Garnish with chopped green onions.
