Sloppy Joes are one of our favorites. This is a slightly healthier version of an old time, kid friendly favorite. Use whole wheat buns for better nutrition and higher fiber. Also, look for a low sodium tomato sauce to lower the sodium.
1 pound ground beef, extra lean
1/2 cup onion(s), medium, chopped
1/4 cup pepper(s), bell, red, yellow, or green, chopped
1 1/2 cups tomato sauce
1 tablespoon tomato paste
1 tablespoon Dijon mustard
1 teaspoon chili powder
1 teaspoon Worcestershire sauce, low sodium
1/2 teaspoon oregano, ground
4 hamburger buns, whole grain, split
In a large skillet over medium heat, add beef, onion and bell pepper. Cook approx 5 minutes until beef is browned, stirring to crumble. Stir in tomato sauce, tomato paste, mustard, chili powder, Worcestershire sauce and oregano. Reduce heat to medium low. Cover and simmer 10 minutes, stirring occasionally. Toast buns on a baking sheet, in a 425 degrees oven for about 5 minutes (watch carefully). Place buns on plates and fill with beef mixture. My kids like a slice of cheese on theirs, I prefer sliced tomatoes.
