Oven Roasted Yam Fries

Yum, even kids love these! So easy to make and so good for you. Good source of fiber, antioxidants and vitamins.
1 1/2 pounds yams or sweet potatoes
1 teaspoon chili powder
2 teaspoons cumin, ground
1 teaspoon garlic powder
1/4 teaspoon salt
1 tablespoon olive oil
cooking spray, olive oil type, gluten free
Preheat the oven to 400 degrees. Remove the skin from the yams with a vegetable peeler. Cut in half and then cut each half into 2 to 3 inch long strips about 1 inch by 1/2 inch thick. Mix the spices in a small bowl. Coat a baking sheet with cooking spray. Toss yams in a bowl with the olive oil to coat them well. Spread them out on the baking sheet, but don't crowd them or they won't brown and crisp in the oven. Sprinkle spice mix over yams. Flip them over and season the other side. Place in the oven for 20 to 25 minutes until crisp and cooked through.
