Spinach and Mandarin Orange Salad

This is a light side dish salad with an Asian dressing. Add grilled chicken to make it a main dish.

Ingredients

1 bag(s) (7 ounces) spinach, fresh baby

1 can (7 ounces) mandarin oranges, drained

2 eggroll wrappers

1/4 onion(s), red, thinly sliced

1/4 cup nuts, almonds, sliced

1 tablespoon canola oil or vegetable oil

2 teaspoons sesame oil, dark

1 tablespoon vinegar, rice, seasoned

2 teaspoons honey

1/4 teaspoon salt

1/4 teaspoon pepper, black, ground

cooking spray, olive oil type

Preparation

For the dressing, mix the oil, vinegar, honey, sesame oil and salt and pepper in a small bowl. Preheat the oven to 400 degrees. Spray a baking sheet with cooking spray. Cut the eggroll wrappers into thin strips. Spread them out over the baking sheet and spray tops with cooking spray. Spread the almonds out on the same baking sheet. Bake for 6 to 7 minutes until crisp and golden. Remove the tough stems from the spinach and place in a medium salad bowl. Add onions and oranges to the bowl. Pour the dressing over the spinach and toss well. Top with almonds and toasted eggroll wrappers and serve.
