Paella is a DELICIOUS Spanish dish with rice and is usually made with saffron (a very expensive spice). This is a shortcut version that uses turmeric, garlic and paprika for seasoning instead. You can omit the shrimp or sausage and substitute cut up boneless chicken instead. I used a half pound each of boneless chicken, shrimp, and turkey sausage.

Ingredients

1 pound sausage, turkey

1/2 pound shrimp, raw (medium or large), medium size

1 1/4 cup rice, long grain white

3 cups chicken broth, reduced sodium (or vegetable broth, reduced sodium)

1 cup peas, frozen

1 onion(s), medium

2 tomato(es), medium

1 pepper(s), bell, red, yellow, or green

1 tablespoon garlic, crushed from jar

1/4 teaspoon turmeric

1/4 teaspoon paprika

2 tablespoons olive oil

Preparation

Cut the tomatoes, pepper, and onion into half inch pieces. Remove the shells from the shrimp and clean them. Pat shrimp dry with a paper towel. Heat a large paella pan or a large skillet over medium high heat. Add one tablespoon of the oil. Add the shrimp and cook for 1 to 2 minutes on each side until just pink. Remove the shrimp from the pan or skillet and place on a plate. Add the remaining oil to the pan or skillet. Remove the sausage from the casings. Break the sausage up and add it to the skillet. Brown the sausage for a minute or so on each side. Add the garlic, onions and peppers and stir. Cook for 2 minutes and add the tomatoes. Add the turmeric and paprika and stir together. Pour the dry rice on top, spreading it out evenly in the pan or skillet. Add the broth and bring to a low boil. Cover the skillet and reduce the heat to the lowest simmer. Cook for about 18 to 20 minutes until the liquid is absorbed and the rice is soft. Add the peas and the shrimp to the skillet just before serving. Stir and serve.
