Pork Chops in a Cherry Balsamic Reduction

The sauce adds a nice touch to otherwise ordinary pork chops.
4 pork chops, approximately 6 ounces each with bone
1/2 cup dried cherries
3/4 cup chicken broth, reduced sodium (or vegetable broth, reduced sodium)
3 teaspoons olive oil
2 tablespoons vinegar, balsamic
2 shallot(s), finely chopped
1 teaspoon garlic, bottled minced
1 tablespoon honey
1/2 teaspoon salt
1/4 teaspoon pepper, black, ground
Heat a small sauce pan over medium heat. Add one teaspoon of the oil. Add the shallots and the garlic to the pan. Cook for about a minute. Add the dried cherries and stir. Add the broth, honey and the balsamic vinegar and bring to a low boil. Reduce the heat to a simmer and cook for about 5 minutes on low heat. Turn the heat off and place the lid on the pan to keep it warm. Heat a large skillet or a grill pan over medium high heat. Season the pork chops with salt and pepper. Place the remaining oil in the pan. Add the pork chops and cook for about 4 to 5 minutes on each side until cooked through. The amount of time will depend on the size and thickness of the porkchops. Remove the porkchops and place on plates. Spoon the sauce over each pork chop and serve.
