Garlic Mashed Potatoes
Prep Time: 5 minutes
Cooking Time: 15 minutes
This is a simple and delicious mashed potato dish with lots of flavor. I garnished with a little dried chives.
1 1/2 pound(s) russet potatoes
2 tablespoons butter
2 tablespoons garlic, crushed from jar
1/3 cup milk, 1% fat
1/2 teaspoon salt
1/4 teaspoon pepper, black, ground
Peel the potatoes and cut into quarters lengthwise and then cut into 1 inch pieces. Place the potatoes in a medium saucepan and fill with enough water to cover the potatoes. Bring to a boil over medium high heat and then lower heat to medium. Cook for about 7 or 8 minutes until fork tender. Drain the potatoes and place in a medium mixing bowl. Place the butter and garlic and milk in a microwavable bowl. Cook for 45 seconds. Add to the potatoes and mash with an electric mixer or potato masher. Add salt and pepper to taste. Sprinkle with paprika for garnish.
