Sweet And Sour Meatballs

These make a great appetizer or a main dish. Our kids love them as well as adults. They are high in sugar and sodium, so serve them only occasionally.

Ingredients

1 1/4 pound(s) ground beef, extra lean

1/3 cup bread crumbs, Italian herb flavored

1 egg(s), large

1/3 cup milk, 1% fat

1 cup pineapple chunks, canned including juice

1 zucchini(s), medium

1 pepper(s), bell, red, yellow, or green

1/2 onion(s), medium

1 tablespoon olive oil

3/4 cup chili sauce (bottled)

3/4 cup grape jelly

Preparation

In a medium sauce pan, add the chili sauce, the juice from the pineapple chunks, the grape jelly and a half cup of water and bring to a low boil. Cook the sauce for about 5 minutes. Add the chopped zucchini, pineapple, red pepper and chopped onion. Cook for about 10 minutes. While the sauce is cooking, combine the ground beef, egg, milk and bread crumbs in a medium size bowl and mix well. Form small meatballs about the size of a large marble. The smaller meatballs will cook quicker and will absorb more flavor from the sauce. Heat a large skillet over medium high heat. Add the olive oil. Add the meatballs and brown them on each side for about 2 minutes. Drain the oil and pat the oil from the skillet with a paper towel. Pour the sauce into the skillet over the meatballs and cook over medium heat for about 10 to 12 minutes until the meatballs are cooked through and have absorbed flavors from the sauce. Serve with rice.
