Couscous W/ Cranberries and Almonds

This is a quick side dish. Pine nuts, chopped walnuts or pecans can be substituted for the almonds. Use whole wheat couscous for additional fiber and nutrition.

Ingredients

1 cup couscous, dry

1 1/4 cup vegetable broth, reduced sodium

1 tablespoon olive oil

1/3 cup dried cranberries

1/3 cup nuts, almonds, sliced, and toasted

1 teaspoon garlic, bottled minced, optional

Preparation

In a large saucepan, bring the vegetable broth and olive oil and garlic (optional) to a boil. Add couscous, give it a quick stir, and cover with lid. Turn heat off and let sit for 5 minutes. Remove lid and stir with a fork. Add cranberries and almonds and stir. Replace lid and let sit for a few minutes before serving.
