Penne With Sausage and Tomato Herb Sauce

With fresh tomatoes and fresh herbs, this is a light and refreshing pasta. We use fat free half and half to lower the fat and calories, but you can use the real for a richer sauce.

Ingredients

1 pound sausage, turkey

8 ounces pasta, penne, whole wheat

2 cups chicken broth, reduced sodium (or vegetable broth, reduced sodium)

1 cup half and half, fat free

2 shallot(s), finely chopped

2 tablespoons garlic, bottled minced

1/2 teaspoon paprika

1/2 cup basil, fresh, chopped

2 tablespoons oregano, fresh, chopped

4 tomato(es), Roma

1 tablespoon olive oil

1/3 cup parmesan cheese, grated, and more for garnish

6 green onion(s)

Preparation

Cook the pasta according to the package directions. Place a large skillet over medium high heat. Add olive oil and sausage and brown it, breaking it up with a wooden spoon. Add the shallots, paprika and garlic, stir and cook for about one minute. Add the broth and cook over medium heat for about 15 minutes, until the liquid is reduced by half. Add the half and half and stir. Simmer for a couple of minutes on low heat. Drain the pasta and place it back in the large pot. Pour the sauce over the pasta. Stir and cook over low heat for about 3 minutes until the pasta soaks up some of the sauce and flavors. Add the tomatoes, basil, oregano, parmesan and green onions and toss well. Pour the pasta into a serving bowl and serve. Garnish with additional parmesan if desired.
