French Onion Soup

Our family LOVES this soup. To make this vegetarian, just use vegetable broth instead of beef broth.
Ingredients
2 onion(s), yellow or white, or any favorite
2 teaspoons olive oil
5 cup(s) beef broth or vegetable broth, low sodium
2 teaspoons garlic, minced
1 teaspoon dried thyme
1 cup cheese, Swiss, shredded or sliced
4 slices bread, French
Preparation
Peel onion, cut in half, and slice each half into slices about 1/4 inch thick. Pour olive oil into a large skillet over medium heat. Add onions and cook for approximately 5 minutes, stirring occasionally. Add garlic and cook over medium heat for about 3 more minutes stirring occasionally. Add the broth and thyme (optional). Increase the heat to high and bring to a low boil. Reduce the heat to medium low, place the cover on the pan, and simmer for approximately 10 minutes. Place bread on a baking sheet and broil for about 1-2 minutes until lightly toasted. Arrange cheese on toasted bread and place back in the broiler to melt the cheese for about 2 minutes, watching carefully not to burn. Pour the onion soup into 4 bowls, place cheese bread on top of each and serve.
