Rotini With Asparagus, Sausage & Mushroom

The mushrooms are processed in the blender with chicken broth to make a kid friendly sauce. You can also cook the mushrooms sliced with the asparagus instead of the puree. Mushrooms are a good source of Niacin and riboflavin, two important B vitamins.

Ingredients

8 ounces pasta, rotini (spirals), or penne

1 pound sausage, turkey

3/4 pound asparagus

1/2 pound mushrooms, Crimini or button or combo

1 cup chicken broth, reduced sodium (or vegetable broth, reduced sodium)

1 shallot(s)

1 tablespoon olive oil

1/4 cup bread crumbs, Italian herb flavored

1 teaspoon Worcestershire sauce, low sodium

1 teaspoon garlic, bottled minced

1 1/2 cups cheese, mozzarella, low moisture and part skim milk

1/4 cup parmesan cheese, grated

Preparation

Bring 8 cups of water to a boil in a large pot. Add the pasta and cook according to the package directions (about 8 minutes). Remove the tough ends from the asparagus and cut at an angle into 2 inch pieces. Place the mushrooms in a blender with the chicken broth and puree for about 20 seconds. (or you can slice the mushrooms and cook them with the asparagus). Heat a large skillet over medium high heat. Remove the turkey sausage from the casings and brown it in the skillet, breaking it into small pieces with a wooden spoon or spatula. When cooked, pour the sausage into an 8 by 8 inch baking dish or equivalent. Place the skillet on the stove over medium heat. Add the shallot and the garlic and stir. Cook for about a minute. Add the asparagus to the skillet and stir. Cook for about 2 minutes until the asparagus is just beginning to cook. Add the puree and the worcestershire sauce, then stir. Cook for another minute or two. Pour the mixture into the baking dish with the sausage and mix well. Drain the pasta and add it to the baking dish. Mix well. Sprinkle the mozzarella on top and then the bread crumbs. Place under the broiler for 2-3 minutes until cheese is bubbly. Serve with parmesan as garnish.
