The whole family will enjoy this soup and it is very quick and easy. You can make it vegetarian using vegetable broth and cheese tortellini.
6 cups chicken broth, reduced sodium (or vegetable broth, reduced sodium)
9 ounces tortellini, cheese, refrigerated package
2 carrot(s), chopped
7 ounces spinach, fresh baby, chopped
2 zucchini(s), chopped
1/4 onion(s), medium, chopped
2 teaspoons olive oil
1/4 cup parmesan cheese, grated
1 pound sausage, turkey, casings removed
Place a large soup pot over medium heat. Place sausage in pot and brown, breaking it up with a wooden spoon. Remove sausage to a bowl. Drain fat. Add olive oil to pot, then add onions and stir. Add chopped carrots and zucchini and stir. Add broth and bring to a low boil, cooking for 2 to 3 minutes. Add tortellini and bring to a low boil. Cook for 8 to 10 minutes according to package directions. At the end, stir in chopped spinach and serve in bowls with a sprinkle of Parmesan cheese.
