Slow Cooker Baked Potato

Most Kids love baked potatoes and when cooked in the slow cooker they are soft and flavorful. Top them with your favorite toppings such as bacon, cheese, steamed broccoli, sour cream, use your imagination. If you want to ccok them in the conventional oven, set oven at 400 degrees and bake for about an hour for large potatoes.
4 potato(es), russet
2/3 cup sour cream, low fat or light
8 teaspoons butter
4 green onion(s)
Wash the potatoes and then prick the top of each potato three or four times with fork to prevent potato from bursting when cooked. Wrap each potato in foil individually and place in slow cooker. Do not add any water, and keep lid closed during cooking time (each time you remove the lid you will need to add 20 minutes to the required cooking time). Large potatoes need to cook for about 9 or 10 hours on low, or 4 to 5 hours on high. Smaller potatoes will need to cook for about 7 or 8 hours on low and 3 1/2 to 5 hours on high, depending on their size. Test by sticking potato with a fork. When done, remove foil and serve. Other topping ideas: Sour cream, chives, bacon, cheese, broccoli, mushrooms, ground taco meat, or chili.
