Orzo Pasta with Sausage, Tomato and Basil

This is a quick and delicious dish and a meal in itself. Serve with Crusty bread or a side salad.
1 1/3 cups orzo, uncooked
1 pound sausage, turkey
1 pepper(s), bell, red, yellow, or green
1 can diced tomatoes, 14 ounces no salt added
1/4 onion(s), yellow or white
1/4 cup basil, fresh, chopped
1/3 cup parmesan cheese, grated
1 tablespoon garlic, bottled minced
3/4 cup chicken broth, reduced sodium (or vegetable broth, reduced sodium)
Peel Carrot and cut into four pieces lengthwise, then chop into small pieces. Chop onion, zucchini and pepper into small pieces as well. Place 8 to 10 cups of water in a large pot and boil over high heat. Add the orzo and cook according to package directions, usually about 8 or 9 minutes. Meanwhile, heat a large skillet over medium high heat. Remove the sausage from the casings and brown it in the skillet, breaking it up with a wooden spoon or spatula. Lower the heat to medium and add the garlic, onion, carrot and pepper and stir. Cook for about 5 minutes until carrots and other vegetables are just tender. Add broth and canned tomatoes and cook for a couple of minutes. Drain the orzo and pour it into the skillet. Stir and cook for a minute or two until flavors are combined. Serve hot with chopped basil and parmesan as garnish.
