Grilled Fish With Creamy Pesto Sauce

This is a lighter version using fat free half and half and it is delicious! You can increase the amount of pesto for a stronger taste if you like. The sauce goes well with salmon, halibut, Mahi Mahi, tuna, and just about any other fish.
1 1/4 pounds Tilapia
1/4 cup pesto sauce (prepared)
1/4 cup half and half, fat free
1/4 teaspoon salt
1/4 teaspoon pepper, black, ground
2 teaspoons olive oil
1/4 teaspoon garlic powder
1/4 teaspoon paprika
In a small saucepan, add the pesto sauce and fat free half and half over low heat. Simmer for a few minutes and then lower heat (for a thicker sauce, add half teaspoon of cornstarch to the half and half and stir before adding to the pesto). Place a large skillet over medium high heat. Add oil. Pat the Tilapia dry with a paper towel. Season the Tilapia with salt, pepper, garlic powder and paprika. Add the Tilapia to the skillet and cook for 1-2 minutes on each side until lightly golden and cooked through. Remove the fish from the skillet and place it on a plate. Top with the pesto sauce.
