Spinach Salad with Cranberries and Walnuts

This salad is delicious and colorful. You can substitute feta cheese, and add chicken to make it a main dish salad.

Ingredients

4 cups spinach, fresh baby, stems removed

1/2 cup cranberries, dried

1/3 cup nuts, walnuts, toasted and chopped

1 tablespoon shallot(s), finely chopped

1 tablespoon olive oil, extra virgin

2 teaspoons vinegar, balsamic

1 teaspoon honey

1 ounce gorgonzola cheese, crumbled

Preparation

Place spinach in a medium salad bowl. Place the walnuts on a baking sheet and bake in a preheated 350 degree oven for about 8 minutes. In a small bowl, mix the olive oil, vinegar, honey, and shallots. Add the cranberries, cheese and toasted walnuts to the spinach. Pour dressing over spinach and toss.
