Grilled Pineapple W/ Frozen Yogurt

This is a simple dessert and fairly low in fat and calories. You can crumble some graham crackers on top or sprinkle with toasted almonds if desired.

Ingredients

12 ounces pineapple, fresh, cut into 4 rings

cooking spray, olive oil type

2 tablespoons brown sugar

2 cups frozen yogurt, vanilla, low fat

Preparation

Slice Pineapple into 4 rings that are about a half inch thick. Coat a large grill pan with cooking spray and heat over medium high heat. Place the pineapple rings on the grill pan or skillet and brown for approximately 2 minutes on each side. Reduce heat to low and cook for another minute or so until pineapple is soft through. Rub Brown Sugar on top of each ring and allow to melt. Remove the pineapple from the pan and place on a plate to slightly cool. Scoop the frozen yogurt into small bowls and top each with a ring of warm pineapple.
