Chris Louie

Chris Louie, President and founder of The Simple Skillet, is married and has two teenaged boys. As a working professional for over 25 years, Chris struggles with the common balancing act between work and family. Preparing family dinner at home had always been a priority, yet big time challenge for Chris. Spending hours each weekend looking through recipe books and making shopping lists to organize meals for the coming week seemed like time she could be spending with her family. And, without a weekly plan she would end up at the grocery store three or four times a week, buying things she didn't need and spending a lot more money. This struggle led to the launching of The Simple Skillet. "I founded The Simple Skillet to help other families simplify their meal planning, and eat healthy meals together at home while saving time and money."

Betsey Reid

Betsey Reid, Senior Vice President of Sales for The Simple Skillet, has three boys ranging from age 4 to16. Betsey manages our independent sales representatives nationwide, and is the main contact for our third-party fundraising initiatives. Betsey also contributes articles, recipes and photography for the site. Betsey took a break from her sales career to become a full time mom and volunteer for various schools and other nonprofit organizations. Fast, simple, healthy dinners were a challenge, yet a priority in her busy family’s lifestyle. She values what The Simple Skillet provides for busy moms like herself, and appreciates the simple fundraising aspect that The Simple Skillet offers. Above all, Betsey enjoys spending time with her family and friends.

Bev Quinby

Bev Quinby

Bev Quinby, Chief Operating Officer for The Simple Skillet, manages all of the website materials, in addition to recipe writing, cooking and photography. She is married and has two teenaged boys. As a working mom in Silicon Valley, Bev also struggled with weeknight dinners. Over the years, Bev has relied on the internet as a source for meal ideas, and loves how easy meal planning and grocery shopping is with The Simple Skillet. Bev is an active mom and enjoys cooking and spending time with her family—while juggling work, carpooling, and after school sports with her two boys.

Diana W. Wright, PhD, RD

Diana W. Wright, PhD, RD

Diana contributes nutritional articles for The Simple Skillet and reviews recipes for nutritional information. With over 25 years of experience as a nutrition educator, she is a Registered Dietitian in private practice with Bay Area Nutrition, LLC and is a faculty member at De Anza Community College. She is also a clinic consultant at Gardner Family Health Network. Diana received her PhD in Nutrition from UC Davis. Her primary goal in nutrition is to assist people as they work to optimize their health using diet, exercise and stress management. Diana strives to translate complex and confusing nutrition information and make it practical and understandable for her clients. Her interests in nutrition include the politics of food, diabetes education, eating disorders and sports nutrition. Kimberly Shannon

Kimberly Shannon, MA, MFT

Kim writes articles on family issues for The Simple Skillet. She is a licensed Marriage and Family Therapist of 20 years and has a private practice in Morgan Hill, CA. Kim holds a M.A. in Marriage Family Child Therapy from California Family Study Center (currently known as Phillips Graduate Institute) and a Bachelor of Arts in Child Development with an emphasis as a Child Mental Health Specialist and a Minor in Psychology from California State University, Northridge. Her professional work includes work in both inpatient and outpatient psychiatric facilities, inpatient eating disorders programs, substance abuse programs, group homes, school programs, and private practice. Kim has completed coursework as a child custody evaluator. Her specialties include working with children, adolescents and families. Kim and her husband, John, have a teenage daughter.
